COOKING
+ Cooking is an applied art and for this reason it is important to know the raw materials well, and how to work with them. It is very important to know the rules.+ I have to thank my parents, both of them farmers, who have passed on to me their respect for nature and their knowledge of the products that grow in my area.
+ In fact I consider it very valuable for my profession to know how a plant is cultivated and to understand the best time to harvest it. These are things that one learns best through first hand experience.
+ At the Silene Retaurant we are fortunate. In season most of the vegetables we need come from our farm, "Le Vignine." We have a modern and well-equipped kitchen with tools "all'avanguardia" that help us to experiment with new recipes. However, we still believe that when the raw materials are of high quality it is not necessary intervene much, in fact, as little as possible.
+ We reduce, where possible, the use of animal fats and to use only extra virgin olive oil in the preparation of fried foods and as the basis of cooking. We are proud to be able to affirm that we never make a distinction between "table oil" and "cooking oil"...
